First Production: The Meeting of East and West

It took Sam Lu more than three months to persuade master distiller John Fitzpatrick of Southern Grain Spirits to take on a challenge never done before. Together they used an original 1850s John Dore copper still, blending Chinese distillation science with Western engineering. Using New Zealand wheat, Australian sorghum, and pure Southern Alps water, they created 24,000 bottles that represented the first baijiu made in the Western world. This collaboration was more than production. It was the beginning of a legacy where innovation met tradition and two worlds became one.

The Purple Beginnings

I still keep the very paint I used on the first Taizi prototypes we carried to the Guangzhou Wine and Spirit Expo in 2013. At the time, our signature purple caps were still on their way from France, and all we had were plain grey samples. Determined to bring our vision to life, I turned to a local panel beater who found the perfect shade of royal purple. With that paint, I transformed each cap by hand, a symbol of persistence, passion, and the belief that even humble beginnings can carry the spirit of something extraordinary.
